I’ll never turn down the opportunity for a ladies lunch, so when my friend Linda asked if I wanted to meet up with her for a lunch date, it was a resounding yes. After the days we’ve been having, it felt great to have plans to get out of the house for a bit.
Linda suggested we try Poké Lab in East Lansing, a newer restaurant near campus that opened this past fall. Poké bowls have been a trendy food item for the last couple of years, so I was excited to give this place a try.
Armed with my sidekick Margot, we visited Poké Lab for lunch with Linda yesterday, and it was delicious!
Poké Lab offers both customizable poké bowls and desserts. It’s a similar concept to a Chipotle or Qdoba, with a variety of options to create just the poké bowl of your dreams:
For my poké bowl, I did a base of brown rice, a scoop each of salmon and tuna, a side of cilantro, avocado, and edamame, and topped with eel sauce, ginger, and sesame seeds. It’s so pretty:
My bowl was very light and fresh tasting. Linda’s lunch was also beautiful:
The restaurant itself was very clean and nice and large, with plenty of seating. I only wish they had a high chair for little miss wiggle butt Margot, but I managed to eat with her on my lap. Linda also gave my arms a break for a bit.
Despite my fidgety one year old, it was so nice to try out a new food place, especially near campus. It’s one of the things I miss about working at MSU. I’m thankful to Linda for suggesting it and for being a sweet and patient friend with my little goof.
